Lighten up! Make Coral Lace Tuiles.

Here is something more relaxing….

 

Try making coral lace tuiles. They take less than 5 minutes to make and look gorgeous in savoury as well as sweet dishes. You can make them in as many colours as you like. And they are very delicate as well as crunchy.


Here is the simplest recipe for savoury ones but you can mix-and-match for variations.

For example, for cumin/chilli or chocolate ones, just ensure the dry ingredients add up to 10 gm (i.e. so 9.5 gm flour and 1/2 gm of cumin or chilli; or 8 gm flour and 2 gm of cocoa powder).


Put 10 gm plain flour, 55 ml water, 60 ml oil, and pinch of salt in small bowl.


Mix until smooth. It is very watery.


Add the food colouring, to suit. If making more than one colour, which I recommend (I match the colours with the personalities of my guests or to ensure they are in contrasting colours with the other food), then divide the base-mixture into small cups and put a different colour in each.


Heat a non-stick (this is important!) frying pan until very hot.


Put one tablespoon (or more, depending on the size you want) of the mixture in the middle.


It will immediately bubble up and start making a lace-like pattern.


Wait until all the water is dissolved then, using a thin knife, gently remove the tuile and pop on kitchen paper.

If you want them to be curved, then pop them immediately around a small container. Don't burn your fingers! Use kitchen paper to gently press them around the glass. You have to be quick.


Dry the pan and then repeat until all the mixture is used up. Done!
